Nutty Whole-Grain Waffles

Nutty Whole Grain Waffles
2 eggs • 1¾ cups unsweetened almond milk • ¼ cup butter, melted • 2 tablespoons honey • ½ teaspoon ground cinnamon • ¼ teaspoon baking soda • 1½ cups 100% whole-wheat pastry flour • 2 teaspoons baking powder • pinch of salt • ½ cup chopped pecans, toasted • ¾ cup pure maple syrup
1. Preheat a waffle iron.
2. In a large bowl, whisk together the eggs, almond milk, butter, honey, cinnamon, and baking soda.
3. In a separate bowl, stir together the flour, baking powder, salt, and pecans. Add to the egg mixture, whisking until combined.
4. Coat the hot waffle iron with cooking spray. Ladle batter onto the waffle iron. Cook for 3 to 4 minutes or according to the manufacturer’s instructions. Repeat with the remaining batter.
5. Serve warm. Top each serving with maple syrup.
